Jason Diaz is an experienced culinary professional with a diverse background in various high-profile positions within the hospitality industry. Currently serving as Sous Chef at What If...Syndicate since February 2022, Jason has held multiple leadership roles including Executive Chef at The Social Hall and Chef De Cuisine at Mariposa Latin Inspired Grill. Prior experience includes Executive Chef positions at Wrigley Mansion and Brazos River Ranch, as well as Chef de Cuisine at Ojo Caliente Mineral Springs Resort and Spa and Hotel Cascada. Jason's career began with roles as Sous Chef at Sheraton Hotels & Resorts and Bon Appétit Management Company. Jason graduated from Cibola High School in 2004 with a high school diploma.

Our story began in 2015 at 8 W. Maple Street in Chicago where Partners Jim Lasky and Chef Danny Grant set out to redefine the traditional notion of what the most generous hospitality could look like. We pride ourselves on being playful, but have created a sincere brand of hospitality that is uniquely ours, and second to none.
