Kimberly Mayo has been working in the nutrition and food industry since 2014. Kimberly began their career as a Clinical Registered Dietitian and Dietetic Technician at Southern New Hampshire Health. In 2016, they joined Small Batch Consulting as a Research & Development, where they developed dips, health bars, and functional beverages. In 2019, they became an Innovation & Optimization Technician at Claremont Foods LLC, collaborating directly with clients to understand their Gold Standard benchtop product and how it can be efficiently produced at scale. In 2020, they started their own business, Kimberly Mayo LLC, providing services such as nutrition fact panels, ingredient specification analysis, and product certification management. In 2021, they joined Nepra Foods, Ltd. as a Commercialization Manager & Dietitian, leading cross-functional projects and overseeing business relationships from concept to commercialization.

Kimberly Mayo obtained their Registered Dietitian Nutritionist degree from the University of New Hampshire in 2015. Prior to this, they obtained a Bachelor of Science in Nutrition and EcoGastronomy from the same university. Kimberly also completed a Study Abroad program in EcoGastronomy at the University of Gastronomic Sciences. In addition, they have obtained three certifications: Genesis R&D Advanced Training and Genesis R&D Professional Training from ESHA Research in 2022, and Registered Dietitian from the Academy of Nutrition and Dietetics in 2012.
