Adam Griffiths is a seasoned real estate professional with extensive experience in the restaurant industry. Currently serving as the Director of Real Estate for Pei Wei since April 2022, Adam oversees nationwide deal-making for the brand. Previously, Adam held similar positions as Director of Real Estate for Charleys Philly Steaks and Wingstop Restaurants, Inc., where responsibilities included managing the national real estate strategy for over 600 locations and overseeing new openings. Adam also worked as Principal at The Griffiths Group, focusing on tenant representation for restaurant and retail developments, and served as the National Development Manager for Baskin Robbins at Dunkin' Brands. Adam is an alumnus of the University of North Texas.

Who we are: Pei Wei Asian Kitchen, is one of four concepts owned and operated by West Coast Capital, the second largest Operator of fast casual/quick-service Chinese restaurants in the U.S. Pei Wei’s story began in 2000 in Scottsdale, Arizona with a dream of a restaurant that served authentic, Asian-inspired dishes without compromising freshness for speed of service. Twenty-one years later, our story continues. With each plate, our guests enjoy bold, Asian flavors that couple sit-down quality with take-out convenience. We place an emphasis on preparing our handcrafted dishes with fresh, house-chopped veggies and whole cuts of white-meat chicken and grass-fed flank steak.
