Simpson Lu has been working in the food and beverage industry since 2005. Simpson started as a Jr-Sous Chef at Regent Hotels & Resorts and then moved to Pullman Hotels & Resorts as a Sous Chef in 2006. In 2008, they became the F&B Kitchen Manager at Mattel, Inc. and then Regional General Manager at California Pizza Kitchen in 2010. In 2016, they took on the role of General Manager at 上海镇三关餐饮管理有限公司. In 2018, they became the F&B Director at ATLAS 巨图 and General Manager Of F&B and Supermarkets at 上海鲜趣实业有限公司. Most recently, they have been the Operation General Manager-Pieology China at Pieology Pizzeria since 2019.

Simpson Lu attended Shanghai Fudan University from 2005 to 2008, where they earned a Bachelor's degree in Hotel Management.
