Currently serving as the Food and Beverage Manager at Prairie Band Casino & Resort since February 2016, Marcus has effectively scheduled and directed staff to optimize productivity while ensuring high food quality and service standards. Prior to this role, Marcus worked as a Sous Chef at Sax & Fox Casino from May 2015 to February 2016, focusing on food safety, regulatory compliance, staff development, and cost control, along with demonstrating strong butchery skills and a refined palate.
