Gan Dunnington started their work experience as a Cardiothoracic Surgeon at Stanford University from July 2010 to January 2013. They then became the Director of Cardiothoracic Surgery at Grapevine CTS in 2013. In 2019, they joined DOGFARM as a Vintner. Currently, Gan Dunnington is the Chief Medical Officer at Pulse Biosciences, Inc. starting from April 2023.

Gan Dunnington graduated with a Bachelor of Science in Biology from Duke University in 1996. After that, they completed a Doctor of Medicine (MD) degree from Virginia Commonwealth University School of Medicine in 2001. Later, they pursued a surgery residency at Stanford University, which was completed by 2008. Gan then specialized in cardiothoracic surgery at the University of Virginia School of Medicine, finishing in 2010. Additionally, they hold certifications as a board-certified general surgeon from the American Board of Surgery and a board-certified thoracic surgeon from the American Board of Thoracic Surgery.
