Cijoy Olickal is the current Chief Information Officer at Red Lobster. Prior to this, they were with SXSW as a coach for their Release It pitch competition featuring ten cutting-edge companies selected to pitch their product or service live at SXSW. Cijoy has also worked as an adjunct professor at the University of North Texas, teaching Blockchain for Business. Cijoy has also worked as a Senior Director, Business Solutions Delivery at Brinker International and as a Principal at Infosys. Cijoy has a total of 17 years of experience in the field of information technology and management consulting.

Cijoy Olickal graduated from the Illinois Institute of Technology with a Bachelor's degree in Electrical Engineering.
