Sunday Akpulonu has a diverse work experience in the medical field. Sunday currently works at The Royal College of Surgeons of England as Course Director for ATLS Instructor and Provider Courses. Additionally, they are an Advance Trauma Life Support (ATLS) Instructor. Prior to this, they worked at Resuscitation Council UK as Medical Director for Advance Life Support and EPALS. Sunday also served as an Instructor for European Paediatric Advance Life Support (EPALS) and Advance Life Support (ALS). Before that, they worked as an Emergency Medicine speciality Doctor at Colchester General Hospital. Sunday began their medical career as a General Surgical registrar at HSE.

Sunday Akpulonu completed a Master of Public Health (MPH) degree in Public Health from University College Dublin in 2006-2007. Sunday also obtained a Bachelor of Medicine, Bachelor of Surgery (MBBS) degree in Medicine from Usmanu Danfodiyo University, Sokoto from 1993-1999. In addition, they received a Certificate in Cohort Studies from the University of Oxford in 2003. In 2013, they obtained a diploma in Laparoscopic Surgery from the University of Strasbourg France. Sunday is also an Advance Life Support (ALS) Instructor certified by the Resuscitation Council (UK).
