Elizabeth Cooper has a diverse work experience spanning several organizations. Elizabeth most recently served as the Chief External Relations Officer at Second Harvest Heartland since April 2021. Prior to that, they held the position of Director of Brand Strategy and Communications at the same organization from June 2018 to April 2021.
From September 2016 to September 2018, Elizabeth worked as a Communications Liaison in the Health Care Division of the Minnesota Department of Human Services.
Before that, they had a long tenure at College Possible, starting as a Communications Manager from June 2013 to March 2015. Elizabeth then progressed to the role of Director of Communications, where they oversaw all internal and external communications and managed a team of five.
Elizabeth also served as the Communications Director at Child Care Aware of Minnesota from March 2005 to June 2013, where they managed all communication services for the non-profit organization.
Early in their career, Elizabeth worked at Milkweed Editions as a Publicist and later as a Publicity Assistant, from 1999 to 2003.
Elizabeth Cooper completed their Bachelor of Arts degree in English with a concentration in Creative Writing at the University of Minnesota Morris from 1993 to 1997. Elizabeth then went on to pursue a Master's degree in Strategic Communications at the University of Minnesota, which they obtained in 2013.

More than a food bank, we’re a leading partner in the policies and programs that work to end hunger, like SNAP, school meals and senior nutrition programs, and we’re an innovator in the areas where food can be the solution, like FOODRx and Minnesota Central Kitchen.
