Chi Bui

Director of Manufacturing at Simply Gum

Chi Bui has a diverse work experience in the chocolate industry. They started their career as an Executive Chocolatier at Cacao Pietro in October 2012 and worked there for a year. In November 2013, Chi Bui founded their own company, Bui Chocolate, where they served as the Founder & Chocolate Maker until February 2015. They then joined Thomas Keller Restaurant Group as the Head Chocolatier of K+M, where they worked from March 2015 to July 2019. In August 2019, Chi Bui became a Chocolate Consultant at Bui Chocolate LLC, staying there until July 2021. They then moved on to Chew as the Principal R&D Chef from August 2021 to August 2022. Currently, Chi Bui is serving as the Director of Manufacturing at Simply, starting from November 2022.

Chi Bui attended the Institute of Culinary Education, where they earned a Culinary Management Diploma and a Pastry & Baking Arts Diploma. They also studied at The New School and obtained a Bachelor of Arts degree. In addition, Chi Bui pursued a graduate program in Analytic Philosophy at Tufts University and studied Wine Microbiology at the University of California, Davis.
