Paulina Santoyo

Paulina Santoyo is an experienced professional in the fields of nutrition and product development, currently serving as a Project Manager for Product Development at Sunday Natural since May 2023. Prior roles include Nutrition Scientist and Product Development Manager at Lykon from December 2020 to February 2023, and a dual role as Nutrition Scientist and Operations and Supply Chain Manager at hundred between May 2019 and November 2020. Paulina also contributed to Data4Life as a Future Entrepreneur in Digital Health and volunteered as a Logistics Officer for Young Leaders for Health. Additional experience includes serving as a Health and Nutrition Advisor at Sodexo and working as a Nutritionist in private consulting and at ISSEMYM- Maternal and Child Hospital. Academically, Paulina holds several advanced degrees in International Health and Nutrition from prestigious institutions, including a Master of Science from the Institute of Tropical Medicine and International Health- Charité and UCL, alongside a Licenciatura in Nutrition from Universidad Autónoma del Estado de México.
