Vincenzo Diroma is an experienced manager in the hospitality industry, currently serving as General Manager at Tortilla Mexican Grill since October 2021. Prior experience includes deputy manager at Leon Restaurants from January 2017 to September 2021, assistant kitchen manager at Pret A Manger from October 2015 to June 2016, and various roles at Vico Restaurant and Barburrito, including assistant manager and team leader. In addition to extensive management experience, Vincenzo is pursuing further education through ACCA, holding an ACCA Diploma in Financial and Management Accounting and a foundation degree in Accounting and Finance, along with a master's degree in Philosophy from Università degli Studi di Bari.

Tortilla began in 2007 after a four-year search across London for decent burritos and tacos. With the help of some friends and an awesome effort from our team all fanatical (in a healthy way) about making the best quality, freshest, most delicious burritos and tacos this side of the Atlantic. We’re committed to sourcing top quality, fresh ingredients, including higher welfare chicken for our pollo asado, grass-fed British Isles beef for our barbacoa and organic tempeh for our vegan chilli no carne. Preparation of all our ingredients is another area where we’re ever-so-slightly zealous. We don’t do frozen or artificial falvours or preservatives and we don’t serve refried beans. We make everything you see in front of you from scratch, with authentic chilies that we personally import from Mexico, Hass avocados, real Monterey Jack cheese; all made and served fresh seven days a week. We operate across more than 60 eat in and take away locations across the UK and through nationwide partnerships with SSP Group plc and Compass Group UK & Ireland. Internationally, we operate in the Middle East, with 10 stores in Dubai and Saudi Arabia through an exclusive franchise partnership with Eathos. We're headquartered in London and employ more than 1000 people.
