Nicolas Alarcon

Nicolas Alarcon is an experienced culinary professional currently serving as Sous Chef at Ai Fiori since August 2019. Previously, Nicolas held positions as a Line Chef at Maralago Club and as Garde Manger Chef at the Country Club of Sapphire Valley, where responsibilities included menu planning and creating visually appealing cold dishes. With a background that includes a line cook role at The Club at Ibis and experience as a Pastry Chef Assistant at Hyatt Regency, Nicolas has developed a strong skill set in both savory and pastry sections of the kitchen. Nicolas holds a Bachelor’s Degree in Hotel Restaurant and Institutional Management from De La Salle - College of Saint Benilde, earned between 2010 and 2013.
