Chang Sivilay serves as the Operations Manager at Big Chicken, where responsibilities include overseeing the opening of new locations in Glendale, Las Vegas, and Austin, as well as an upcoming site in Valencia. Previously, Chang held various executive chef positions at Proper Hospitality, including stints at DTLA Proper Hotel, The Avalon Hotel & Bungalows, and The Hotel June. Other notable experiences include serving as the Executive Chef at The Jeremy Hotel, Valley Hunt Club, The Standard Hotel, Mondrian Hotel, and The Resort at Pelican Hill, along with teaching culinary techniques at The Art Institute of California. Chang's culinary education includes an Associate of Occupational Studies in Culinary Arts from the California Culinary Academy and a B.S. in City and Regional Planning from California Polytechnic State University-San Luis Obispo.
