Rob Sopkin

Rob Sopkin has extensive work experience in development and real estate roles. Rob is currently serving as the Chief Development Officer at Cooper's Hawk Winery and Restaurants since June 2023. Prior to that, they held the position of SVP, Chief Development Officer at Panera Bread from April 2018 to June 2023.

Before joining Panera Bread, Rob was the Chief Development Officer at Planet Fitness World Headquarters from September 2017 to April 2018. Rob also served as the Chief Real Estate Officer at Dean & DeLuca from March 2016 to August 2017.

Rob gained significant experience in the development field during their long tenure at Starbucks, where they held the role of Managing Vice President of U.S. Store Development from April 1998 to March 2016. Prior to Starbucks, they worked as the Director of Development at Hollywood Entertainment and as a Real Estate Manager at Mikasa.

Rob started their career as a Commercial Broker at The Inland Real Estate Group of Companies, Inc. from 1991 to 1994. Rob then worked as a Broker at Paul Lawrence Associates from 1986 to 1990.

Rob Sopkin has a Bachelor of Arts (B.A.) in Liberal Arts and Sciences/Political Science from the University of Illinois Urbana-Champaign.
