Charlotte Robertson

Senior Director of Operations at Evolution Hospitality

Charlotte grew up overseas as part of a foreign service family and developed a love of travel and food at a young age. During college in Virginia, she started waiting tables at a Japanese restaurant to combat homesickness and fell in love with the industry. She held various management positions in Charlottesville, VA, Washington, DC, Las Vegas, Austin, TX, and New York City, learning every aspect of running a business. While getting her MBA at UVA’s Darden School of Business, she started multi-unit leadership in Las Vegas for José Andrés’s ThinkFoodGroup and loved the synergy of learning a new job while in the program. After graduation in 2018, she transferred to NYC and oversaw service operations as well as administrative and financial systems at ThinkFoodGroup’s newest concept, Mercado Little Spain. When the pandemic hit, she moved back to her adopted hometown of Charlottesville, VA and began working for Evolution. Her background in service training and restaurants has helped develop training programs for independent and soft branded hotels, as well as restaurant consulting for Aimbridge and Evolution with Taste & Theory.
