Maia Nelson is a skilled food scientist with extensive experience in research and development within the food industry. Currently serving as a Research and Development Technologist at GU Energy Labs since September 2025, Maia previously held positions at UPSIDE Foods as Food Scientist I and II, contributing to various food science projects from September 2022 to September 2025. While at New Age Eats from June 2021 to August 2022, Maia developed innovative product prototypes utilizing cultivated pork fat cells, managing experiments and data analysis. Earlier experience includes an Undergraduate Research Assistant role at California Polytechnic State University-San Luis Obispo, focused on enzyme-assisted oil extraction research, and a Quality Assurance Internship at Renaissance Food Group, where Maia optimized operational processes for food safety.
