Sarah C. Klopatek

Chief Livestock Scientist at JBS USA

Sarah C. Klopatek, PhD, is currently serving as the Chief Livestock Scientist and Director of Sustainability Research and Development at JBS USA since July 2022. In addition, Sarah holds the position of Honorary Fellow at the Nelson Institute for Environmental Studies at the University of Wisconsin-Madison starting April 2024. Prior to these roles, Sarah was a Postdoctoral Research Fellow and Associate Instructor/Research Assistant at the University of California, Davis from May 2016 to September 2022 and worked as a Livestock Sustainability Consultant at Beef Sustainability Consulting from August 2015 to September 2021. Sarah earned a PhD in Beef Cattle System Dynamics and Livestock Sustainability from the University of California, Davis, a Master's degree in Animal Science from Texas A&M University, and a Bachelor's degree in Animal Science from the University of Arizona.
