James grew up in Brighton, Sussex, and moved to London aged 22. After years spent working his way up the ranks in Michelin-starred kitchens throughout the city, in the summer of 2006 James began work at London restaurant institution St John Bread & Wine, where he would become Head Chef. 2011 saw James start the Young Turks chef collective with Isaac McHale and Ben Greeno. In April 2014, James opened Lyle’s in Shoreditch, where he aims to demonstrate the promise of cooking with British ingredients. Lyle’s won a Michelin Star 18 months after opening, and has placed in The World’s 50 Best Restaurants year on year. June 2019 saw James open his second site, Flor, a wine bar and bakery in Borough Market.
