Simon Hopwood has a diverse range of work experience in the meat processing industry. Simon started their career as the Quality Assurance and Operations Manager at G.H Keily Meat Exporters, where they developed and implemented the Meat Safety Quality Assurance program. Simon then moved on to Burrangong Meat Processors Pty Ltd as an Operations Manager, where they focused on continuous improvement and operational management. Simon later established their own business, Hilltop Natural Meat Company, as a Director and Sales Director. Simon introduced business export options and managed airfreight and shipping exports to the UAE and Asia. Simon then joined Hilltop Meats Pty Ltd, first as a Sales and Marketing Manager, and later as the General Manager. Simon negotiated a Fair Work Workplace Agreement and was responsible for overseeing various sectors of the company's operations. Simon's most recent role was with South East Asian Livestock Services Pty Ltd (SEALS), where they served as the General Manager and Director. Simon focused on business development and operations, negotiating complex contractual agreements with multiple stakeholders. Simon is currently the Head of Operations at Kilcoy Global Foods.

Simon Hopwood completed a Post Graduate Certificate in Australian Rural Leadership at James Cook University from 2013 to 2014. Prior to that, they participated in the Australian Rural Leadership Program at the Australian Rural Leadership Foundation from 2012 to 2013, focusing on Educational Leadership and Administration. In 2000 to 2003, they earned a Diploma in Meat Management from Victoria University. Simon also obtained additional certifications, including a Post Graduate Diploma in Australian Rural Leadership from James Cook University in 2013 and a Fellowship of the Australian Rural Leadership Program in 2012.
