Kim Mclendon has extensive experience in the fields of nutrition, culinary arts, and education. Currently serving as the CEO of the Commission on Economic Opportunity since 2018, Kim also holds the position of SA Nutrition Education Coordinator/Educator at Rustic Kitchen, where work has been ongoing since April 2012. Additionally, Kim has contributed to Luzerne County Community College as a Culinary Instructor since August 2012. Educational qualifications include a degree in Nutrition and Dietetics from Marywood University and an Associate of Science in Culinary Arts and Education from Luzerne County Community College, completed between 1998 and 2000.
