Geoff Simmons is an accomplished culinary professional with extensive experience in the food and beverage industry, currently serving as Vice President of Food & Beverage at MGM China since August 2015, where responsibilities include strategic planning, concept development, and daily operations across Macau properties. Previously, Geoff held positions as Director of Culinary for MGM Macau and MGM Cotai, and Executive Chef at both MGM Macau and Fairmont The Palm in Dubai. An earlier tenure at Shangri-La Hotels and Resorts included roles as Executive Chef and Executive Sous Chef. Geoff's educational background includes a Trade Certificate in Commercial Cookery from TAFE NSW and leadership training from Leadership Management Australia.
