Plamen Nikolov

Director Flavor & Sensory at New School Foods

Plamen Nikolov has extensive work experience in the flavor and sensory industry. Plamen currently holds the position of Director of Flavor & Sensory at New School Foods since December 2022. Prior to this role, they worked as the Research & Innovation Director at CAPOL Inc from October 2017 to December 2022. In this position, they led the R&I Department and focused on customer-based solutions and strategies for transitioning from artificial to natural colorants and flavors. Plamen also conducted research and innovation in identifying, stabilizing, and encapsulating novel natural colors. Before joining CAPOL Inc, Plamen served as an R&D and Innovation Specialist at Colarome Inc from June 2013 to October 2017. Plamen began their career as a Junior Flavorist & Consultant at Novotaste Inc from May 2010 to May 2013. Additionally, they worked as a Food Regulations Consultant as a Private Consultant from March 2012 to October 2012.

Plamen Nikolov attended McGill University from 2003 to 2007, where they obtained a Bachelor of Science degree in Food Science. Following this, they pursued further education at McGill University from 2007 to 2009 and earned a Master's degree in Food Science. Plamen Nikolov continued their academic journey at McGill University from 2009 to 2012, obtaining a Doctor of Philosophy (Ph.D.) degree in Food Chemistry.
