Elliot Swartz

Elliot Swartz is a highly accomplished Senior Principal Scientist at The Good Food Institute, where the focus is on analyzing technical and economic challenges in the cultivated meat industry and leading a global working group while supervising a team of scientists. With a background in cultivated meat research, Elliot has held various prestigious roles including Principal Scientist, Lead Scientist, and Senior Scientist. Additional contributions include serving as a Board Member for the Tufts University Center for Cellular Agriculture consortium and participating in the Governance Group of the Cultivated Meat Modeling Consortium. Previous advisory roles include providing expertise to the cultivated meat program at the University of California, Davis, and consulting for Verge Genomics. Elliot holds a PhD in Neuroscience from UCLA and a BS in Behavioral Neuroscience from Lehigh University.
