Brian Fitzgerald

Head Chef at Tucanos Brazilian Grill

Brian Fitzgerald began their work experience in 2003 as the Head Chef/General Manager at 909 Grill, where they were responsible for researching, planning, and creating a large American menu. In 2005, they worked as the Head Chef at Dogfish Head Craft Brewery, where they created recipes and menus for the brew pub and executed successful beer and food pairings. From 2007 to 2012, Fitzgerald served as the Executive Chef at Fin's Fish House & Rawbar, overseeing daily operations and managing a staff of around 20 employees. Brian then worked as the Chief Remote Operating Officer at Rest and Relaxation from 2012 to 2013. Currently, they hold the position of Head Chef at Tucanos Brazilian Grill.

Brian Fitzgerald attended Kinnelon High School from 1978 to 1982, where they obtained a diploma with a focus on Cooking and Related Culinary Arts. Following their high school education, they enrolled at the Academy of Culinary Arts from 1982 to 1984 and earned a Bachelor's degree in Culinary Arts/Chef Training.
