Currently serving as the Head Chef at Gordon Ramsay Restaurants since March 2022, Paolo previously excelled as a Development Chef at The Ivy Collection from December 2019 to March 2022, contributing to the success of Ivy Asia. Prior to that, Paolo held the position of Executive Chef Adjoint at Maya Bay/Maya Jah/Maya Mia from April 2018 to December 2019 and served as Executive Chef at Les Grandes Alpes Private Hotel from November 2017 to September 2018.
