Paolo Paris is an experienced culinary professional currently serving as a sous chef at Grupo Mambo since April 2022. With a career that spans several roles in the culinary industry, Paolo has previously worked as an A&R at Pump Music Records since September 2012, and held various chef de partie positions at Restaurante El Olivo Mi and Restaurante El Olivo Mio in 2020 and 2019, respectively. Additional chef de partie experience includes a tenure at Hotel New Algarb in 2018, and ownership of Bambu Bar from March 2015 to February 2017. Paolo's entrepreneurial background as an independent worker from September 1990 to February 2015 showcases a diverse skill set. Recently, Paolo completed a training course in restaurant English and principles of the circular economy at Metodo Consultores, enhancing knowledge and expertise in sustainable practices.
