Ajeesh Mathew is a highly experienced culinary professional, currently serving as the Head Chef at Heartwood Collection since June 2023. With previous roles as Head Chef at Brasserie Blanc and Jamie Oliver Restaurants, Ajeesh has demonstrated leadership in fine dining environments. Prior experience includes positions as Culinary Director at Instacuisino LLP and STEAKHOUSE Head Chef at Carnival Corporation. Ajeesh's culinary journey began with internships at ITC Hotels and Oberoi Hotels & Resorts, followed by various roles at Taj Hotels and Carnival Cruise Line. Ajeesh holds a Bachelor's Degree in Hospitality Administration/Management from the Institute Of Hotel Management, Catering Technology and Applied Nutrition, Guwahati.
