Simon Edwards

Simon Edwards has a diverse work experience in the hospitality industry. Simon currently holds the position of VP Operations NY at Rhubarb Hospitality Collection since August 2023. Prior to that, they were the VP of Events by RHC at the same company from August 2022 to September 2023. Simon also worked as the Director of Food and Beverage at The Peninsula Hotels from August 2021 to August 2022, and at The Skylark NYC from June to August 2021. Before that, they held several roles at Constellation Culinary Group, including Vice President Operations, California from October 2019 to August 2021, Regional Manager-Culture & Events, New York from October 2018 to October 2019, and General Manager, Carnegie Hall from October 2016 to October 2018. Simon's earlier experience includes working as an Operations Manager at PPHE Hotel Group from May 2015 to July 2016, and as a Meetings and Events Manager at The Belfry Hotel & Resort from April 2013 to May 2015. Simon started their career at QHotels, where they served as a Conference and Events Operations Manager from January 2012 to April 2013, and as an Assistant Conference and Events Operations Manager from January 2010 to March 2012.

Simon Edwards earned a Bachelor of Arts degree from Coventry University, where they studied from 2005 to 2008. Simon later obtained an Operational Excellence Diploma from University College Birmingham, completing the program from 2010 to 2012.
