Justin Schau

Justin Schau has extensive experience in the brewing industry. Justin began their career at Sprague Farm & Brew Works in 2010, working as a Kegger, Assistant Brewer, and Bartender until 2013. From 2013 onwards, they joined Southern Tier Brewing Company, where they held various roles including Brewer, Lead Cellar Brewer, Lead Operator, and eventually became the Head Brewer in 2017. In 2021, they briefly worked as the Head Brewer at 28 Bridges Brewery before joining Ruby Valley Brew in 2022, where they currently hold the position of Head Brewer.

Justin Schau attended the Siebel Institute of Technology in 2015, where they completed the World Brewing Academy's Brewing Technology - Concise Course. Prior to that, they attended Penn State University, although specific details regarding the degree and field of study are not provided.
