Chef Gus joined PCC in 2012. His expertise includes French cuisine, and he has executed his specialty in such restaurants as La Crémaillère and Roger Sherman Inn. In addition, Gus has worked in many clubs around the area, including Tokeneke Country Club, The Shore & Country Club, Leewood Country Club, Greenwich Field Club and Willow Ridge Country Club. Gus enjoys working with his staff and guiding them toward the ultimate culinary vision. His professional affiliations include Club Chefs of Connecticut and Club Chefs of Westchester.
